July to Mid-October is the bluefin season in Australia, which means we have a larger supply of toro sashimi than normal days.
Our expert fishmongers select the best sashimi-grade bluefin tuna by examining the color of the fish tail in the fish market. This meticulous process guarantees that only the highest quality tuna makes its way to our shops. Then, our shop chefs will skillfully develop the cuts from a whole bluefin tuna (over 100kg) into three indulgent varieties – Otoro, Chutoro and Akami, we offer a wide selection to satisfy all toro lovers’ cravings. Otoro, the most luxurious and expensive cut of maguro, is located primarily in the abdomen of the tuna and is renowned for its high fat content. Though visually more white than red due to the high fat levels, Otoro’s fat content does not make it taste greasy; rather, it melts in your mouth. Chutoro (中トロ): A Perfect Harmony of Meatiness and Fat
